This year he embarked on a new venture adding a café/ restaurant to his list of growing businesses. Red Door Oyster Co. Café, in Stanley Bridge, Prince Edward Island, is a dream come true for the chef. It is an embodiment of what his belief is in food and the kind of down home environment that’s easy to sit back and enjoy some amazing local fish, shellfish and some other incredible menu options.
He has spent his life in perpetual dedication to his craft, is an unwavering supporter and promoter of amazing local cuisine and the farmers, fishers, and artisanal food producers that make that happen each and every day on PEI and throughout Canada. Starting his career as a teenager working in small restaurants, he worked his way through some of Canada’s top restaurants and working alongside some of the best chefs Canada has ever seen. He has also seen the high side of some of Canada’s leading hotels, Fairmont Chateau Lake Louise, The Hyatt Regency Calgary, The Westin Edmonton and the Westin Harbour Castle to name a few. He has travelled the world extensively and learned the skills of many cultural cuisines. He has a global perspective in his flavouring and in his approach to food he creates for his clients. But the freshest and best ingredients and treating food right is a must!
On the job, Ross has the same dedication to all aspects of his businesses. He ensures his clientele are looked after in a world-class manner and is committed to ensuring all are treated amazingly well.
He is innately aware there is a serious depletion of great culinarians in our industry and works tirelessly at keeping people focussed on staying in the business for as long as possible. He shows them just how rewarding a career as a cook and a chef can be. He respects his trade and the people in it.
